Reflection of Hiking my New Hampshire 48
For those of you who don’t know, in the New Hampshire White Mountains, 48 mountains are 4,000 feet or taller in New Hampshire. It is a challenge/accomplishment to hike all of them. There is no timetable, just you and your abilities and ambitions! I started this journey on August 20, 2016, hiking Mount Lafayette, on a whim, and at that moment I was hooked and I had no idea where this would take me. Protein Pumpkin Muffins
These are one of my favorite go-to fall breakfast snacks. They’re so good and jam-packed with great protein, antioxidants, omega-3, super greens, superfruits, fiber, prebiotics, probiotics, and more! Ingredients: 2 Eggs 1 Banana 1/4 cup Pumpin Puree 1/4 cup Honey 1/2 cup Peanut Butter* 2 Packets of Pumpkin Spice Shakeology** 1/2 tsp Baking Powder 1/2 tsp Pumpkin Spice 1/4 tsp Salt 1/4 cup chocolate chips (Optional) Directions Preheat Oven to 350°F In a mixer, mix together all ingredients, adding chocolate chips last. Camping Trip to Acadia Trip
This past weekend, Derrick and I embarked on a journey up north to Acadia National Park with our Tiger Moth. Here is our trip! Campground Acadia Seashore Camping & Cabins This campground was awesome! The owners were lovely and so friendly! The campground is right on the water about 50 minutes from Mt. Desert Island and only 20 minutes from Schoodic Point. Find out what we had in our camper HERE.
